Why it works: Garlic and onion match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓

Stewing, Hashing, and Mincing

Ingredients

Directions

  1. In a pot, combine veal stock, red wine, spices, garlic, onions, bay leaves, and sweet herbs. Simmer until nearly done.

  2. Strain the liquid and return it to the pot. Add the hare pieces, flour, and butter. Stew until fully cooked.

  3. Prepare a stuffing as if for roasting and form it into balls. Add the stuffing to the pot with the hare.

  4. Pour in the beef or mutton broth. Stew in a water bath for 2.5 to 3 hours until done.

  5. For convenience, this dish can also be baked. Add wine to the gravy when serving.
