Ingredients

Directions

The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Blanch and beat the almonds into a smooth pulp with a little rose water.

  2. Add the powdered sugar and beaten egg whites to the almond mixture.

  3. Beat the mixture well for some time.

Shape and bake

  1. Drop small cakes of the mixture onto wafer paper placed on tin plates.

  2. Sift powdered sugar over the cakes.

  3. Bake in a moderate oven at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the macaroons.
Powdered sugar
Adds sweetness and helps give the batter a smooth, stable texture.
Egg whites
Provide structure and lift, setting into a light, chewy interior when baked.

The step that matters

Beat the mixture well for some time. Thorough beating combines the almond paste, sugar and whipped egg whites into an even batter. Under-mixing leaves uneven texture, while the batter needs enough body to hold its shape when dropped.
