Apple Soup

Why it works: Ginger and pepper match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 6,800 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Directions

Prepare the broth

  1. Remove the fat from the mutton broth and strain it through a fine sieve.

  2. Bring the broth to a boil, then add the apples.

Simmer and season

  1. Let the soup simmer gently for 25 to 30 minutes, or until the apples are soft.

  2. Strain the soup to pulp it, then add the ginger and pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pudding apples
Break down into pulp as they soften, thickening the soup and giving it body and sweetness.
Mutton broth
Forms the savory liquid base that carries the flavour of the whole soup.
White powdered ginger
Adds warm, aromatic spice that contrasts with the sweetness of the apples.

The step that matters

Simmer gently until the apples are soft. A hard boil can break the soup unevenly and leave the broth cloudy or greasy. Gentle simmering lets the apples soften fully so straining produces a smooth pulp.

Swap the apple

How well each one fits the dish's main ingredients (mutton, ginger, pepper, rice):
