Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Pounded to a paste, they give the soup its body and nutty, creamy flavour.
Roasted chicken or partridges
Adds savoury meat flavour and body to the paste that thickens the soup.
White bread
Soaked and squeezed, it adds softness and helps bind the smooth paste.
Veal stock
Forms the liquid base, adding rich savoury depth to the soup.
Thick cream
Adds richness and a silky texture to the finished soup.

The step that matters

Heat until just boiling after adding the cream. Cream can curdle or separate if it is boiled hard or for too long, so it should be heated only until it just reaches a boil.

Swap the mace

How well each one fits the dish's main ingredients (almond, chicken, bread, veal, cream):

  1. Nutmegfits better
