Ingredients
Directions
In a large pot, brown the butter with the ham, onions, celery, carrots, herbs, lemon rind, peppercorns, and salt.
Stew gently for 7-8 hours, then strain the stock and cool it to remove the fat.
Remove the skin and fat from the head, cutting into strips; dice the tongue.
Put the stock in a large pot and thicken it with butter and flour when boiling.
Add mace, cayenne, and sherry, stirring for 1-2 minutes.
Add the head and simmer for 1 hour and 15 minutes to 1 hour and 30 minutes, stirring often.
Just before serving, add the forcemeat balls and diced brain, dipped in egg yolk and crumbs.
