What each ingredient does

Hare
Provides the main meat flavour and, once pounded, body to the soup.
Lean ham
Adds savoury, salty depth to the broth and meat mixture.
French rolls
Their crumb thickens the soup and gives it a smooth, velvety body.
Port wine
Adds sweetness and a rich, fruity aroma to the finished soup.
Onions
Build savoury sweetness and aroma as they simmer into the stock.

The step that matters

Simmer for 20 minutes without boiling. Once the crumb and port are added, a rolling boil can make the thickened soup separate, cloud, or scorch on the base. Gentle heat keeps it smooth and even.
