To Scallop Oysters

Ingredients

Directions

  1. Open the oysters carefully and scald them in their own liquor.

  2. Wash the oysters in the liquor to remove grit and remove gills from oysters.

  3. Butter the scallop shells and sprinkle fine bread crumbs inside.

  4. Layer the oysters, bread crumbs, and small bits of fresh butter in the shells.

  5. Pour strained oyster liquor over the layers.

  6. Top with a thick layer of bread crumbs.
