Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vegetable marrow
Forms the body of the sauce, softening into a smooth purée when stewed and sieved.
Veal broth or pale gravy
Supplies the liquid and savoury base in which the marrow stews.
Rich cream
Adds richness and a smooth, silky texture to the finished sauce.
Mild onion
Adds gentle aromatic flavour that sits under the marrow without overpowering it.

The step that matters

Press the mixture through a fine sieve and beat it well. Sieving breaks down the cooked fibres of the marrow and removes stringy pieces, so the sauce turns smooth rather than grainy or stringy.

Swap the white pepper
