What each ingredient does

Stoned raisins
Adds sweetness and body, helping thicken the sauce as they break down.
Crabs or other hard acid fruit
Provides acidity and fruity bulk that balances the sweet and spiced elements.
Coarse brown sugar
Adds sweetness and depth, and helps balance the sharpness of the vinegar and fruit.
Vinegar
Adds sharp acidity and thins the mixture to a pourable consistency.
Garlic
Contributes pungent aroma that mellows as the sauce sits in the bottle.

The step that matters

Gradually add vinegar until the sauce reaches the consistency of thick cream. Vinegar is added in small amounts because too much thins the sauce past the intended texture, and it cannot be easily thickened back once overdiluted. Adding it slowly lets the cook stop at the right consistency.

Swap the raisin

How well each one fits the dish's main ingredients (crab, sugar, ginger, pepper, vinegar, garlic, clove):

  1. Limefits better
  2. Lemonfits better
  3. Plumfits better
  4. Raisinthe original

Fit is the average pairing score against crab, sugar, ginger, pepper, vinegar, garlic, clove. Candidates are from the same food group and used in at least 100 recipes.
