Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh mushrooms
Release their liquid under salt, which becomes the base of the ketchup.
Coarse sea salt
Draws moisture out of the mushrooms and helps preserve them during the long rest.
Mushroom catsup
Adds concentrated mushroom flavour and extra liquid to the mixture.
Whole black pepper
Adds warm, sharp spice to the boiled liquid.
Mace
Adds a warm, aromatic spice note to the boiled liquid.
Ginger
Adds a bright, aromatic warmth to the boiled liquid.

The step that matters

Stir occasionally for 4 days. Salt must be evenly mixed in over the long rest so the mushrooms release liquid uniformly and the batch cures without spoiling. Stirring spreads the salt and keeps the surface from going off.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, pepper, ginger):

  1. Turmericfits better
  2. Clovefits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against mushroom, pepper, ginger. Candidates are from the same food group and used in at least 100 recipes.
