Why it works: Cucumber and onion match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

What each ingredient does

Young cucumbers
Provide the crisp, mild vegetable body that the vinegar brine softens and flavors over time.
Boiling vinegar
Supplies the acidity that preserves and sharpens the pickles while drawing in flavor.
Mild onions
Add a gentle sweet-savory aroma that mellows during the long rest.

The step that matters

Covering the cucumbers completely with vinegar. Any cucumber left above the liquid is exposed to air and can spoil or go soft and discolored, since the acidic brine only protects the submerged pieces.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cucumber, vinegar):

  1. Radishfits better
  2. Mustardfits better
  3. Cauliflowerfits better
  4. Onionthe original

Fit is the average pairing score against cucumber, vinegar. Candidates are from the same food group and used in at least 100 recipes.
