Ingredients

Directions

Prepare the roll

  1. Smoothly cut the beef slice and flatten it on a table.

  2. Sprinkle the inside with fine salt and cayenne or black pepper.

  3. Prepare the forcemeat, adding minced onion or shallot and spices if desired.

  4. Place the forcemeat on one end of the steak and roll it up tightly.

  5. Skewer and bind the meat to secure the forcemeat inside.

Roast and serve

  1. Cover the roll with buttered paper and roast for 1.5 hours or longer, depending on size.

  2. Baste the meat with butter throughout the roasting process.

  3. Twenty minutes before serving, remove the paper and dust the meat with flour.

  4. Serve with brown gravy poured over the beef.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef rump slice
Forms the main body of the roll and provides the meat that is cooked and served.
Forcemeat
Fills the roll with a seasoned stuffing that adds flavour and moisture to the centre.
Butter
Basting fat that adds richness and helps the outside brown as it roasts.
Flour
Dusted on the surface near the end of roasting to help create a browned crust.

The step that matters

Covering the roll with buttered paper. The paper shields the outside from direct heat so the meat cooks through gently while the basting butter keeps the surface from drying out. Removing it near the end allows browning.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, pepper, butter, flour):
