What each ingredient does

Beef palates
Form the main substance of the dish, becoming tender through long gentle boiling and simmering.
Rich brown gravy or curry sauce
Adds moisture and savory flavor as the palates finish simmering.
Butter
Adds richness and fat to the boiling liquid, rounding out the flavor.

The step that matters

Boiling until the skin peels off. Palates need long, gentle boiling so the tough connective tissue softens and the skin loosens. Boiling hard can toughen the meat and break it apart, so the heat should stay at a gentle simmer.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, onion, clove, carrot, butter, sauce):

  1. Parsleyfits better
  2. Celeryfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against beef, onion, clove, carrot, butter, sauce. Candidates are from the same food group and used in at least 100 recipes.
