Fricandeau of Veal

Ingredients

Directions

  1. Lay the veal flat on a table with the skin side up and carefully remove the skin with a sharp knife.

  2. Lard the veal thickly with small pieces of fat and make incisions on the underside for seasoning absorption.

  3. In a large stewpan, arrange the carrots, onions, parsley, bay leaves, mace, lemon thyme, and pepper to support the meat.

  4. Cover the vegetables with slices of bacon and place the veal on top.

  5. Pour in enough veal broth to nearly cover the vegetables without touching the veal.
