What each ingredient does

Turkey
Forms the main roast; its meat cooks through and becomes the centrepiece of the dish.
Forcemeat or sausage meat
Fills the breast, adding moisture and rich seasoned flavour as it cooks inside the bird.
Butter
Basting fat that promotes browning and adds richness to the roasted skin.

The step that matters

Removing the buttered paper 20 minutes before done. The paper shields the breast early on to limit overbrowning and drying. Removing it near the end lets the skin brown and crisp, so timing matters.
