What each ingredient does

Young french beans
Provide the main vegetable body and tender texture when cooked.
Good melted butter
Adds richness and moisture, coating the beans with fat and flavor.
Juice of ½ lemon
Adds acidity that brightens the buttery flavor of the beans.

The step that matters

Drain and dry the beans before adding butter. Water left on the beans dilutes the butter and stops it clinging, so heating them dry over medium heat lets the butter coat them evenly.

Swap the white pepper

How well each one fits the dish's main ingredients (beans, butter, lemon):

  1. Parsleyfits better
  2. Thymefits better
  3. Sagefits better
  4. White pepperthe original

Fit is the average pairing score against beans, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
