Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the crisp, watery main body of the salad, which salt draws moisture from.
Salad oil
Coats the cucumber slices, adding fat and a smooth mouthfeel.
Chili vinegar
Adds acidity that brightens the salad and balances the salt and oil.

The step that matters

Draining the water after salting. Salt draws water out of the cucumber slices. If the liquid is not poured off, the salad becomes diluted and soggy, and the dressing slides off rather than clinging to the slices.
