What each ingredient does

Carrots
Form the main body of the dish, becoming tender and sweet as they cook.
Melted butter
Adds richness and a silky mouthfeel to the cooked carrots.

The step that matters

Judging the boiling time by carrot size. Young and full-grown carrots need very different cooking times. Undercooked carrots stay firm and starchy, while overcooked ones turn mushy and lose flavour. Checking tenderness as you go helps achieve the right texture.
