Brioche

Ingredients

Directions

  1. Separate 8 ounces of flour to make the leaven. Mix it with yeast and warm water into a light paste.

  2. Make incisions on top, cover with a cloth, and let it rise near the fire for 20 minutes.

  3. In the remaining flour, create a hollow space and add salt, sugar, and cream or water.

  4. Cut butter into small bits and add to the flour mixture.

  5. Pour in the eggs one by one, mixing gently until a smooth paste forms.

  6. If needed, add an additional egg or yolk for better consistency.

  7. Once the leaven has risen, mix it with the paste until fully incorporated and smooth.
