Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Line a large dish with fine puff-paste.

  3. Cover the bottom with the veal cutlet or rump-steak, seasoned with salt, cayenne, and nutmeg or mace.

  4. Prepare enough young pigeons to fit in one layer in the dish.

  5. Place a slice or ball of butter, seasoned with cayenne and mace, inside each pigeon.

  6. Arrange the pigeons in the dish with their breasts facing down.
