To Dry Ripe Gooseberries with Sugar
Ingredients
Directions
Make the syrup
Boil the water and sugar together until the mixture thickens into a syrup.
Cook and soak the gooseberries
Add the gooseberries to the syrup and simmer for 8 to 12 minutes until clear and tender.
Remove from heat and let the gooseberries sit in the syrup for a couple of days.
On the third day, drain the syrup, skim it, and pour it back over the gooseberries immediately.
After 48 hours, drain the gooseberries again and place them singly on plates or dishes.
Dry
Dry the gooseberries in a gentle oven.

What each ingredient does
- Gooseberries
- Provide the fruit that becomes tender and clear, and the main body of the finished dried product.
- Sugar
- Sweetens the fruit and, dissolved in water, forms the syrup that draws out moisture and preserves it.
The step that matters
Simmering the gooseberries in syrup. Simmering only until the fruit is clear and tender keeps the skins intact and the flesh firm. Overcooking can break the fruit down, leaving it mushy rather than holding its shape during soaking and drying.
