What each ingredient does

Raspberries
Provide the fruit flavor, pectin and bulk that give the jam its body.
Granulated sugar
Sweetens the jam and, while boiling, helps it thicken and set and preserves it.

The step that matters

Boil the mixture quickly after adding the sugar. Sugar must dissolve fully before a hard, rapid boil so the jam reaches the concentration needed to set. Stirring and skimming keep it from scorching and clear off foam, which keeps the jam clean and well set.
