What each ingredient does

Raspberries
Provide the main fruit flavour and colour that the vinegar draws out during infusion.
Pale white wine vinegar
Extracts raspberry flavour and acts as the sharp acidic base of the syrup.
Powdered sugar
Sweetens the vinegar and, once boiled, thickens it into a syrup.

The step that matters

Boiling the strained vinegar with the sugar. Boiling gently dissolves the sugar and thickens the liquid into a syrup; boiling too hard can evaporate too much liquid and darken or spoil the flavour, while skipping the scum removal leaves cloudiness in the finished syrup.
