Why it works: Celery and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef neck
- Gives the stock its rich meaty body as it stews for hours.
- Flour
- Thickens the stock into a smooth, velvety body when cooked with butter.
- Butter
- Enriches the soup with fat and helps form the thickening roux with flour.
- Sherry
- Adds aromatic acidity and depth to the finished soup.
- Onions
- Build savory sweetness and flavor into the stock during long stewing.
The step that matters
Skim and cool the stock. Skimming the surface during boiling removes scum that would cloud the soup, and cooling the strained stock lets the fat solidify so it can be lifted off cleanly.
