Why it works: Celery and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
A Less Expensive Hare Soup
Ingredients
Directions
Make the stock
Combine beef, hare, and cold water in a large pot. Bring to a boil and skim thoroughly.
Add salt, onions, celery, carrots, peppercorns, and cloves. Reduce heat and simmer gently for 3 hours or until hare is tender.
Prepare the hare and bread
Remove hare joints, cut meat from bones, and mince finely.
Soak the crumb of two rolls in a little boiling soup, then press dry in a cloth.
Finish the soup
Mix minced meat with soaked bread and remaining hare stock. Strain the mixture.
Pass the soup through a strainer, season with cayenne, and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Hare
- Provides the main meat and rich, gamey flavour to the soup.
- Neck or shin of beef
- Adds body and gelatin-rich depth to the stock.
- Rolls (in the method)
- Soaked crumb thickens the minced mixture, giving the soup a smoother body.
- Onions
- Build savoury sweetness and aroma as they cook into the stock.
- Celery
- Adds aromatic, savoury flavour to the stock.
The step that matters
Skim the stock thoroughly after bringing it to a boil. Skimming removes coagulated proteins and fat that would otherwise cloud the stock and taste greasy, so the soup stays clear and clean-flavoured.
Swap the clove
How well each one fits the dish's main ingredients (beef, onion, celery, carrot):
- Parsleyfits better
- Cuminfits better
- Thymefits better
- Clovethe original
Fit is the average pairing score against beef, onion, celery, carrot. Candidates are from the same food group and used in at least 100 recipes.
