Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and fat, carrying flavour and helping the fish brown lightly.
Flour
Thickens the stock into a gravy as it cooks.
Trout
The main protein, which flakes tender as it stews gently in the liquid.
Veal stock
Forms the liquid base of the gravy and gives it savoury body.

The step that matters

Stew the fish gently. A gentle simmer keeps the trout moist and intact, while a hard boil would toughen the proteins and break the flesh apart.

Swap the mace

How well each one fits the dish's main ingredients (butter, flour, pepper, nutmeg, veal, parsley, lemon):

  1. Marjoramfits better

Fit is the average pairing score against butter, flour, pepper, nutmeg, veal, parsley, lemon. Candidates are from the same food group and used in at least 100 recipes.
