Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Adds fat and body, mellowing the sharp bite of the horseradish.
Vinegar
Adds acidity that sharpens flavor and helps preserve the horseradish's pungency.
Grated horseradish
Supplies the pungent heat that defines the sauce.

The step that matters

Do not let it boil. Heating horseradish releases and intensifies its volatile compounds, and boiling makes the sauce sharper and can cause the cream to separate. Stirring over low heat and stopping just before simmering keeps the flavor controlled and the sauce smooth.

Swap the horseradish

How well each one fits the dish's main ingredients (cream, vinegar):

  1. Mustardfits about as well
  2. Horseradishthe original
  3. Onionfits about as well
  4. Cucumberfits about as well

Fit is the average pairing score against cream, vinegar. Candidates are from the same food group and used in at least 100 recipes.
