What each ingredient does

Small button mushrooms
Provide the main body and earthy flavour of the sauce.
Béchamel or white sauce
Forms the creamy base that carries the mushrooms and seasonings.
Butter
Adds richness and fat to the white sauce base.
Flour
Thickens the white sauce so it coats the mushrooms.

The step that matters

Simmer until the mushrooms are tender. Mushrooms release water as they cook, which can thin the sauce, while underdone mushrooms stay firm and chewy. Simmering gently until tender both cooks them through and lets the sauce reduce to a coating consistency.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, sauce):

  1. Capersfits better
  2. Garlicfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against mushroom, sauce. Candidates are from the same food group and used in at least 100 recipes.
