Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vegetable marrow
Forms the bulk of the puree and softens into a smooth pulp when stewed.
Veal broth or pale gravy
Supplies the cooking liquid and savory depth in which the marrow stews.
Mild onion
Adds gentle savory sweetness and aroma as it softens during stewing.
Rich cream
Adds richness and a smooth, silky mouthfeel when stirred into the sauce.

The step that matters

Stirring in the cream. Cream is rich in fat and milk proteins that can separate and turn grainy if kept at a hard boil. Stir it in as the sauce boils, then serve promptly.
