Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main flavour and, once dried and powdered, concentrated savoury taste.
Veal gravy
Supplies liquid and savoury depth to the sauce.
Cream
Adds richness and body to the sauce.
Flour
Thickens the sauce as it heats.

The step that matters

Heat gently until thickened. Flour thickens through starch gelatinisation, which needs moderate heat and stirring. High heat can scorch the cream or leave lumps, so the sauce should be heated gently and kept moving.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
