Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the chopped beef or mutton with the beef suet.

  3. Season the mixture with salt, cloves, mace, and cayenne pepper.

Assemble and bake

  1. Line a round baking dish with thin slices of bacon.

  2. Press the meat mixture into the dish and smooth the top.

  3. Cover the meat with more bacon slices.

  4. Place a plate on top with a weight and bake for 2 hours and 15 minutes.

Serve

  1. Remove the bacon before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef or mutton
Provides the main body of the cake and its meaty flavor and texture.
Beef suet
Adds fat that keeps the meat moist and rich as it cooks.
Fat bacon
Lines and covers the meat, adding fat and savory flavor to the surface.

The step that matters

Placing the weight on the plate before baking. The weight presses the meat mixture firmly into the dish so it holds together when sliced. Without even pressure, the cake can crumble or bake unevenly.

Swap the mace

How well each one fits the dish's main ingredients (beef, clove, pepper):

  1. Allspicefits better
  2. Marjoramfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against beef, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
