What each ingredient does

Veal
Provides the main protein, which firms and browns when fried in butter.
Bread-crumbs
Adds a light coating that helps the cutlets brown and gives a crisp surface.
Butter
Carries heat and flavor and promotes browning in the pan.
Curry powder
Adds warm, aromatic spice flavor to the sauce or gravy served with the veal.

The step that matters

Frying the veal over medium heat. Veal pieces are thin and lean, so heat that is too high scorches the outside before the inside cooks through, while too low prevents browning. Medium heat lets the surface brown gradually as the proteins react.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, bread, nutmeg, butter, lemon, pepper):

  1. Parsleyfits better

Fit is the average pairing score against veal, bread, nutmeg, butter, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
