Dressed Cucumbers

Ingredients

Directions

Prepare the cucumbers

  1. Cut cucumbers into lengths of about 1 inch and remove the rind.

  2. Pare them into thin ribbons until you reach the watery part, which should be discarded.

Salt and drain

  1. Sprinkle the ribbons with cayenne and salt, and let them drain for a little while.

Dress and serve

  1. Arrange the cucumbers lightly in a clean dish.

  2. Dress them with oil mixed with chili vinegar or equal parts of chili and common vinegar.

  3. If desired, add a teaspoon of vinegar from pickled shallots for extra flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the crisp, watery body of the salad once salted and drained.
Coarse sea salt
Draws water out of the cucumber ribbons, seasoning them and firming their texture.
Oil
Carries flavor and gives the dressing a rich, smooth mouthfeel.
Chili vinegar
Adds acidity and sharp heat that brightens the cucumber's mild flavor.

The step that matters

Draining the ribbons. Salt pulls water from the cucumber by osmosis. Leaving the ribbons too long makes them limp and diluted, while skipping drainage lets excess water thin the dressing.

Swap the cucumber
