Why it works: Cucumber and lemon match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 2,067 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Stewed Cucumbers

Ingredients

Directions

Prepare

  1. Pare and quarter the cucumbers, removing the seeds and cutting each quarter in half.

  2. Sprinkle with white pepper or cayenne and flour, then fry lightly in butter.

  3. Remove from the pan and drain on a sieve.

Stew and finish

  1. Place the cucumbers in enough brown gravy to nearly cover them and stew gently for 25 to 30 minutes until tender.

  2. If the gravy needs thickening, remove the cucumbers and keep them warm while stirring in flour and butter to the gravy.

  3. Optionally, add lemon juice or chili vinegar to the sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Become tender and absorb the flavour of the gravy as they stew.
Flour
Lightly coats the cucumbers and thickens the gravy when stirred in.
Butter
Adds richness and helps the cucumbers brown lightly when fried.
Brown gravy
Forms the savoury sauce that the cucumbers stew in.

The step that matters

Stewing the cucumbers gently until tender. Cucumbers are mostly water and soften quickly, so a gentle simmer keeps them intact while they become tender. A hard boil can break them down into a mushy texture and make the gravy cloudy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (cucumber, white pepper, flour, butter):

  1. Avocadofits better
  2. Lemonthe original
  3. Limefits about as well

Fit is the average pairing score against cucumber, white pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
