Mince Pies.

Mince Pies.

Oven, in the book's wordsA fierce oven

Ingredients

Directions

The book says “a fierce oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Butter some tin pattypans well and line them evenly with thinly rolled puff paste.

  2. Fill the pattypans with mincemeat.

  3. Moisten the edges of the covers, which should be about ¼ inch thick, and close the pies carefully.

  4. Trim off the excess paste and make a small aperture in the center of the crust with a fork or knife.

  5. Ice the pies with cold water and sifted sugar if desired.

  6. Bake in a preheated oven at 400°F (200°C) for 30 minutes.

  7. Cover with paper if they start to brown too much.
