Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the milk and set the body of the pudding.
Eggs
Egg yolks bind the custard and set it; whipped whites form the light topping.
Milk
Provides the liquid that softens the crumbs and forms the custard.
Sugar
Sweetens the pudding and helps the beaten whites hold their structure.
Butter
Adds fat for richness and a softer, tender crumb.

The step that matters

Beating the egg whites until firm. Under-beaten whites will not hold stiff peaks and the topping will collapse or stay runny. Over-beating makes them dry and grainy, so stop once they are firm and glossy.

Swap the orange

How well each one fits the dish's main ingredients (bread, butter, milk, sugar, egg, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against bread, butter, milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
