Quince Blamange, with Almond Cream

Ingredients

Directions

Make the almond cream

  1. Blanch and beat the almonds to a smooth paste, adding a few drops of water to prevent oiling.

  2. Pour the boiling quince juice over the almond paste and stir together.

  3. Place the mixture in a strong cloth and twist the ends to extract the almond cream.

Set and serve

  1. Put the extracted juice back on the fire with the sugar and bring to a boil.

  2. Add the isinglass and simmer for 5 minutes, skimming off any scum.

  3. Stir the blamange until nearly cold, then mold it for serving.

What each ingredient does

Almonds
Provide the creamy base and flavor of the blamange once beaten into a paste and extracted.
Quince juice
Supplies the liquid and fruit flavor that the almond cream is extracted into.
Sugar
Adds sweetness and helps balance the tartness of the quince juice.
Isinglass
Gelatin-like setting agent that firms the liquid so it holds its molded shape.

The step that matters

Adding the isinglass and simmering. Isinglass must be dissolved fully in the hot liquid to set evenly. Skimming off scum during the simmer keeps the finished blamange clear and smooth, and stirring it while it cools prevents a rubbery layer or uneven set.
