What each ingredient does

Green gooseberries
Provide the fruit, pectin and tartness that give the jam its body and bright flavour.
Powdered sugar
Sweetens the jam and helps it thicken and set as it boils down.

The step that matters

Boil the mixture quickly for 45 minutes while stirring constantly. Sugar and fruit must reach a high enough temperature to thicken and set. Constant stirring prevents scorching on the bottom of the pan, which would give a burnt taste, and skimming scum keeps the jam clear.
