What each ingredient does

Morello cherries
Provide the fruit, whose tartness and juice form the base of the preserve.
Powdered sugar
Draws moisture out of the cherries and sweetens them, helping form a syrup while preserving the fruit.

The step that matters

Simmering the cherries softly. Simmering gently keeps the fruit whole and prevents it from breaking down into mush. Sugar dissolves into the released juice, so vigorous boiling risks scorching and an overly hard or burnt result.
