What each ingredient does

Mushrooms
Are the food being preserved, and they release flavour into the brine as they cook and soak.
Common white salt
Preserves the mushrooms and seasons the brine, drawing out moisture and limiting spoilage.
Water
Carries the salt and spices and forms the liquid that the mushrooms are packed in.

The step that matters

Let the bottles cool completely before sealing. Sealing warm bottles traps steam and can create condensation and pressure changes, and a poor seal lets air in, which invites spoilage of the preserved mushrooms.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, ginger):

  1. Turmericfits better
  2. Clovefits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against mushroom, ginger. Candidates are from the same food group and used in at least 100 recipes.
