Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and richness as they set and bind the batter.
Butter
Adds fat for tenderness and a rich flavor in the crumb.
All-purpose flour
Forms the gluten network that gives the cake its structure.
Sugar
Adds sweetness and helps the crumb brown and stay moist.
Currants
Add fruity sweetness and chewy pockets throughout the cake.

The step that matters

Gradually add the brandy, currants, and any spices you like.. Adding liquids gradually helps the batter emulsify and stay smooth, so the eggs and butter do not separate and the cake bakes evenly.
