Stewed Calf's Head Soup

Ingredients

Directions

  1. In a pot, combine 3 pints of stock and bring to a simmer.

  2. Add 2 tablespoons of curry powder and 2 tablespoons of thickening, stirring well.

  3. Cook for 20 minutes, then add the flesh of the calf's head and sweetbread, cooking for an additional 15 minutes.

  4. In a separate bowl, mix 1 cup of thick cream with 1 teaspoon of flour or arrowroot, then stir into the soup and boil for 2 minutes.

  5. Add 1 tablespoon of chili vinegar or 2 tablespoons of lemon juice to taste.

  6. For a richer flavor, stew the brain of the calf's head in a little stock, sieve it, and gradually mix it back into the soup.
