Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Stewed Trout

Ingredients

Directions

Prepare

  1. Melt the butter in a broad stewpan or well-tinned iron saucepan.

  2. Stir in the flour, mace, cayenne, and nutmeg.

  3. Add the cleaned and dried trout, shaking the pan to prevent sticking.

  4. Brown the fish lightly on both sides.

Stew

  1. Pour in the veal stock and add the parsley, bay leaf, lemon peel, and salt.

  2. Stew the fish gently for 30 to 45 minutes, or longer if the fish is large.

  3. Add acid or wine to the sauce if desired.

Serve

  1. Skim the fat from the gravy, strain it over the fish, and serve the trout immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Trout
The main protein, which becomes tender and flaky when gently stewed.
Butter
Carries flavor and helps the fish brown lightly before stewing.
Flour
Thickens the stock into a smooth, lightly bodied gravy.
Veal stock
Forms the cooking liquid and gives the sauce savory depth and body.

The step that matters

Stew the fish gently. Gentle simmering cooks the fish through while keeping its delicate flakes intact. A hard boil can break the flesh apart and toughen it, and the sauce can become cloudy or greasy.
