What each ingredient does

Butter
Enriches the sauce with fat and gives it a smooth, rounded mouthfeel.
Flour
Thickens the sauce as it cooks, giving it body and a smooth texture.
Veal gravy
Provides the main savory meaty body of the sauce.
Sherry or madeira
Adds wine acidity and aromatic depth to the finished sauce.
Lean ham
Contributes savory, salty meat flavour as it simmers into the base.

The step that matters

Adding the flour and butter thickening. Flour must be fully mixed into butter before adding, and the sauce brought back to a boil, so the starch swells and thickens smoothly without lumps or a raw floury taste.
