What each ingredient does

Young cucumbers
Provide the crisp vegetable base that soaks up the vinegar flavor.
Boiling vinegar
Acts as the acid that preserves and gives the pickles their sour tang.
Salt
Seasons the brine and helps draw flavor into the cucumbers.

The step that matters

Covering the cucumbers completely with vinegar. Any cucumber left above the liquid is exposed to air, where it can spoil or discolor. Full submersion keeps the pickles uniformly acidic and protected while they rest.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cucumber, vinegar):

  1. Radishfits better
  2. Mustardfits better
  3. Cauliflowerfits better
  4. Onionthe original

Fit is the average pairing score against cucumber, vinegar. Candidates are from the same food group and used in at least 100 recipes.
