Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the earthy flavour of the powder, which is the base of the dish.
Veal gravy
Supplies the liquid and savoury body of the sauce.
Cream
Adds richness and smoothness to the sauce.
Flour
Thickens the sauce as it heats, giving it body.

The step that matters

Heat gently to make the sauce. Flour thickens liquid only when heated gently and stirred, since high heat can scorch the sauce or leave it lumpy. Gentle heat lets the starch swell evenly into a smooth white sauce.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
