What each ingredient does

Mutton shoulder
Provides the main meat, which becomes tender and rich during long gentle stewing.
Salt
Draws moisture out of the meat and helps cure and preserve it during the rubbing period.
Sugar
Balances the salt and spices and helps the cure develop flavour and browning.
Beef broth
Supplies liquid for slow stewing, keeping the meat moist and forming the base of the gravy.
Cloves
Adds warm, aromatic spice flavour that penetrates the meat during curing.

The step that matters

Stewing gently for 4 hours. Low, slow heat with enough liquid breaks down the tough connective tissue in the shoulder, making the meat tender; boiling hard can toughen and dry the surface.

Swap the mace

How well each one fits the dish's main ingredients (mutton, sugar, clove, pepper, ginger, beef, onion):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against mutton, sugar, clove, pepper, ginger, beef, onion. Candidates are from the same food group and used in at least 100 recipes.
