Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton cutlets
Provide the meat that flavours the stew and becomes tender during long simmering.
Potatoes
Form the bulk of the stew, thicken the liquid as they break down, and soak up flavour.
Onions
Add sweetness and aroma as they soften into the stew.

The step that matters

Simmer gently rather than boil hard. A gentle simmer lets the mutton become tender without toughening its proteins or breaking up the potatoes. A hard, rolling boil makes meat fibres tighten and the potatoes fall apart into a cloudy broth.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
