Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides lean meaty structure and a delicate, tender texture in the patties.
Lean pork
Adds meaty flavor and body that holds the patties together when cooked.
Inside fat of pig
Supplies fat that keeps the patties moist and juicy as they cook.
Flour
Dusted on the outside, it helps the patties brown and form a light crust in the butter.
Butter
Conducts heat in the pan and adds richness and browning to the outside of the cakes.

The step that matters

Form the cakes less than 1 inch thick. Thickness controls how evenly the centre cooks. Cakes that are too thick can brown on the outside before the middle is cooked through, while thinner cakes cook more evenly in the butter.

Swap the mace

How well each one fits the dish's main ingredients (veal, pork, pepper, nutmeg, flour, butter):

  1. Sagefits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against veal, pork, pepper, nutmeg, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
