Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Forms the main body of the dish, cooked whole and carved for serving.
Bread crumbs
Form a crisp, golden coating that browns during the final return to the fire.
Butter
Carries heat into the crumbs and helps them brown evenly and richly.
Forcemeat
Fills the breast, keeping the meat moist and adding savoury flavour as it cooks.

The step that matters

Return the fowl to the fire until it is a clear, light brown all over.. Crumbs and butter brown quickly through Maillard reactions, so the fowl can over-darken or dry out if left too long. Checking colour all over prevents uneven browning.
